Creamy Chicken Fajita Pasta

Ingredients

  • 1 tsp Oil
  • 1 tsp Garlic
  • 3 Bell Peppers, sliced
  • 1 Onion, diced or sliced
  • 1 1/2 lbs Boneless Chicken
  • 16 oz Pasta, short-cut
  • 5 small Tomatoes, diced
  • 3 cups Chicken Broth
  • 1 cup Half & Half Cream
  • 2 cup Shredded Cheese

Fajita Seasoning

  • 1 tbsp Chili Powder
  • 1 tbsp Cumin
  • 2 tsp Paprika
  • 1 tsp Salt
  • 1 tsp Oregano
  • 1/4 tsp Cayenne Pepper

Optional Toppings

  • Cilantro, diced
  • Sauted Jalapenos
  • Red Pepper Flakes
  • Avocado

Instructions

  • Cut up the bell peppers, onion, and tomatoes and place into a skillet and set aside.
  • Mix together the fajita seasonings and set that aside as well.
  • In a hot skillet, add oil and garlic and toss in the cut up chicken. Sprinkly on some of the seasoning and let the chicken cook fully.
  • In the veggie skillet, add oil and garlic as well as the same seasoning we prepped. Stir together
  • Once the veggies are cooked a bit, add in the pasta and the chicken broth. Then add the rest of the seasoning and stir. Set a timer for 12 minutes and let the pasta cook. Stir a bit during this time.
  • Once done, add the chicken to the veggie skillet.
  • Add the half & half cream and the shredded cheese and mix together until it's melted and combined.
