Ash/Aush - Afghan Spaghetti

Ingredients

  • 1 lb Ground Beef
  • 1 large Onion, diced
  • 1 tbsp Garlic, minced
  • 2 tsp Coriander
  • 1 tsp Cumin
  • 2 tsp Paprika
  • Salt and Pepper, to taste
  • 6 cups Water
  • 24 -36 oz Tomato Sauce
  • 6 - 12 oz Linguine Noodles
  • 1 can Chickpeas, rinsed
  • 1 can Kidney Beans, rinsed
  • 1/2 cup Cilantro, chopped
  • 3 tbsp Dill

Instructions

  • To make Ash/Aush, In a large pot or Dutch Oven, begin by sautéing your ground beef in diced onions and garlic, along with the seasonings
  • Add in your water, tomato sauce and the noodles.
  • Once the noodles are tender, throw in the chickpeas and kidney beans along with the cilantro and dill.
  • Let everything simmer until you're ready to eat!
