Ingredients

  • 1 Cucumber peeled and chopped
  • 2-3 Tomato diced
  • 1/2 cup Cilantro Leaves finely chopped
  • 3 Green Onion finely chopped
  • 10 Baby Carrots* chopped
  • 1 Lemon
  • Salt to taste

Instructions

  • Thoroughly wash vegetables and herbs and pat dry.
  • Chop cilantro and green onions finely.
  • Peel cucumber and chop.
  • Dice tomatoes and carrots.
  • Add vegetables and herbs to mixing bowl.
  • Squeeze lemon juice over salad and salt to taste.
  • Mix everything together and enjoy!
