Afghan Potatoes "Kachalu"

Ingredients

  • 5 Medium Potatoes
  • 1 Onion, sliced
  • 2 Tomatoes, sliced
  • 1/4 cup Oil
  • 1 cup Water
  • 1 24 oz jar Tomato Sauce
  • 1 tbsp Ginger Paste
  • 1 tbsp Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1 tsp Turmeric
  • Salt to taste

Optional Toppings

  • Greek Yogurt
  • Dried Mint
  • Minced Garlic
  • Cilantro
  • Serrano Peppers

Instructions

  • Start by slicing the potatoes, tomatoes and onions. 
  • Place them in a frying pan and add oil, tomato sauce, water, minced garlic, ginger paste, turmeric, coriander, cumin and salt.
  • Cover and cook until the potatoes become tender.
  • Serve with a dollop of minty yogurt and a sprinkle of cilantro on top. Enjoy!
