Finding the right potatoes is the key to making the kind of potatoes that you desire. We usually use Russet Brand so that we can shape ours in a wedges style. We like them nice and long!
With that being said, however, it’s important to note that you can ultimately use any type of potato brand you’d like because it really just depends on how you want them to look. We have made these in “hockey puck” style as well by using Gold Potatoes

Tips on Making The Best Afghan Style Potatoes
Fresh Potatoes/Ingredients: You always want to find the freshest source of ingredients when making these type of potatoes. Locally sourced potatoes are always a recommendation of ours. You might want to also top this off with Fresh Cilantro because cilantro makes everything better!
Perfect Blend of Seasonings: A traditional blend of Afghan seasonings is recommended here, such as Garlic, Ginger, Turmeric, Coriander and Cumin. Don’t skimp out on these, because this is where most of the flavor will start!
Method of Cooking: The best way to make these Afghan Potatoes is to sauté or fry them on a pan over the stove. You can pop it into the oven if you’d like but we imagine it would take much longer to cook and won’t have the same tender consistency that we’re looking for here in this recipe. But to each their own!
Add Lemon or Yogurt: Give it that nice tangy twist with some lemon or add a simple yogurt by mixing together yogurt, minced garlic and a little bit of water!

- 5 medium sized Potatoes
- 1/4 cup Oil
- 1 Onion (sliced)
- 2 Tomatoes (sliced)
- 1 cup Water
- 1 jar 24oz Tomato Sauce
- 1 tbsp Garlic (minced)
- 1 tbsp Ginger Paste
- 1 tsp Turmeric
- 1 tsp Coriander
- 1 tsp Cumin
- Salt to taste
How To Make Afghan Potatoes
Start by slicing the potatoes, tomatoes and onion
Place them in a frying pan and add oil, tomato sauce, water, minced garlic, ginger paste, turmeric, coriander, cumin and salt.
Cover and cook until the potatoes become tender.
Serve with a dollop of minty yogurt and a sprinkle of cilantro on top. Enjoy!

Storage Recommendations
Use Airtight Containers
We highly recommend using airtight containers such as Skroam’s 10 Pack Glass Containers because glass is best!
Refrigeration
Let the potatoes cool before you store them into the refrigerator. You can typically store them in the refrigerator for up to 3 days. Make sure you use an airtight container to avoid earlier expiration.
Freezing
If, for whatever reason, you cannot finish it in 3 days, you may freeze the potatoes as well. This will make it last up to 2 months but we recommend consuming it sooner for best results.
Reheating
Use an oven or stovetop when reheating the potatoes to get a similar texture to when you initially cooked it. However, a microwave will definitely work but keep in mind it may make the potatoes mushier than usual.

For this recipe we recommend you use the type of potato depending on how you want to cut them as well as how long you want it to cook for. The larger the potato, the longer it takes to cook.
You will most commonly find Ginger, Coriander, Cumin, Paprika, and Turmeric being used in an Afghan dish.
Add any types of spices you’d like! The more the merrier! As long as you keep the base recipe how we have it, you’ll make the best potatoes ever!
You want to use a tomato paste/sauce for this for best results!
If you have a family of 5 or more, we recommend at least 5 potatoes. If you’re planning for a massive party, then I would say a potato a person! We know how big those Afghan parties can be 🙂
